Nori Spinach Beef Mince with Rice

 

If you are in need of a quick dinner then this Nori Spinach Beef Mince with Rice recipe is for YOU! it incorporates our Thai Chilli Jam to give it that bang of flavour and a little heat to warm the soul.

Ingredients

  • 1 tsp Nori (blended into powder)
  • 1kg Beef mince 
  • 280g Spinach
  • 2 tbsp Cashew nuts (lightly toasted & then blended once cool into a powder)
  • 2 tbsp Minced ginger
  • 3 tbsp Minced garlic
  • 3 tbsp Light soy sauce (gluten-free)
  • 2 tbsp Fish sauce (gluten-free)
  • 2-4 Tbsp Thai Chilli Jam
  • 2 tbsp mirin
  • 1 tbsp brown sugar
  • Lime (garnish)
  • 3 tbsp Lime juice
  • 200ml Chicken stock plus enough to cover the rice, around 1litre.
  • 3 Shallots (sliced thinly)
  • 1 Red chilli (sliced thinly - garnish)
  • 2 tbsp Fried shallots (garnish)
  • 1 tsp Korean chilli flakes
  • Salt
  • Pepper
  • Sesame seeds
  • Sesame oil
  • 4 cups Rice (washed 6-8 times until clear)

Instructions:

To cook the rice first rinse your rice off in cold water 6-7 times until the water runs clear.

Next, add the chicken stock and a pinch of salt and then mix well.

Bring the rice to the boil and once it’s at boiling point turn the heat right down and then pop a lid on, cook until the rice absorbs all the water.

Leave the rice to rest for 5 minutes and then fluff up with a fork and then allow to cool.

Tip: if you leave the rice for an hour before cooking in the chicken stock you will get a bigger and nicer rice.

Next, lightly toast cook the cashew nuts and leave to cool and once cool blend.

Next, get a wok on a medium heat with 2 tbsp sesame oil and cook the spinach, leave to one side and reheat when ready to serve.

Next, add 2 tbsp sesame oil to the wok on a high heat, add your shallots and cook until soft and then ad the garlic and ginger and cook for another minute.

Add, the beef and make sure to break it up and season with a little salt and pepper, cook until browned.

Next, add the soy sauce, fish sauce, mirin, lime juice, 2 tsp nori powder, Korean chilli flakes, 1 tsp sesame seeds, 200ml chicken stock, brown sugar and Thai Chili Jam and then cook until the liquid reduces and becomes thick-ish.

Reheat the spinach in another fry-pan and then get a serving plate or bowl and put rice in the middle and make a hole in the rice to put the beef mince mixture in it and then spinach on top of the beef mince and then cashew nut powder over with fried shallots, more nori powder and red chilli.
