Loaded Smashed Avocado

Ingredients:

  • 2 ripe avocados
  • 1 tbsp minced garlic
  • 1 red chilli (deseeded)
  • 2 tbsp lime juice
  • 2 tbsp Demeter – Gourmet Jalapeno Herb Hot Sauce
  • Season to taste with flaked sea salt & black crack pepper.
  • 8 baby Roma tomatoes (cut into quarters)
  • 3 basil leaves (diced small)
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1/3 red onion (diced small)
  • Season to taste with flaked sea salt & black crack pepper.
  • 1 chorizo (sliced)
  • 2 eggs
  • 2 tbsp Vinegar
  • Pinch of flaked sea salt
  • Pinch smoked paprika powder.
  • 2 slices of gluten-free bread
  • Butter
  • Toasted pine nuts

Method:

  1. Start by bringing a pan of water with a good smash of salt and 2 tbsp vinegar to a raging boil.
  2. While the water is heating up, take off the skin and remove the pit from the avocado and pop into a bowl. Mash the avocado with a fork and add the garlic, Demeter,  lime juice, red chilli, salt & pepper. Mix well to combine.
  3. In another bowl, mix all the salsa ingredients and set aside.
  4. Cook the chorizo until lightly golden and once cooked, remove and place on paper towel.
  5. Toast the bread and set aside.
  6. Crack each egg into a small ramekin or cup.
  7. Once the water is boiling, use a fork to create a whirlpool in the pan and gently pour one egg into the centre of the whirlpool. Repeat with the second egg. Cook for 60-90 seconds.
  8. Remove the eggs from the pan and place on paper towel.
  9. Take a plate and place the toast on it. Spread the avocado mixture over the toast and then add the salsa, chorizo, and poached egg on top.
  10. Sprinkle paprika over the egg and serve with a pinch of toasted pine nuts.
