These Kimchi Pancakes really are next level and are vegetarian too! You seriously will not miss meat with the bad boys! Paired perfectly with our Thai Dressing Sauce, only issue will be is that you are going want them every day!

Ingredients:
- 1large egg
- 1Tbsp kimchi brine from jar (chopped)
- 2 Tbsp Gluten-Free light soy sauce
- ¾ cup plus 1 Tbsp Gluten-free all-purpose flour (if not Gluten-Free use normal flour)
- 1½ cups kimchi
- 4 Spring onions
- 4 Tbsp neutral oil
- ¼ cup water
Ingredients Serving:
- Thai Dressing Sauce
- ½ x Spring onion for garnish (sliced finely)
Instructions:
Get a bowl and crack the egg into it and then add the soy sauce, Kimchi brine, water, and whisk.
Next, whisk in the flour and add the Kimchi and spring onions.
Get skillet on a medium high heat and drop in 1-2 Tbsp of oil.
Get a ½ cup and half fill with the Kimchi mixture and then pop into the oil, do this 4 times for 4 serves, if your skillet is not big enough do in batches. Cook for around 2 minutes per side, flip once golden brown.
Once cooked pop onto paper towel to drain any remaining oil.
Repeat the process until no mixture is left.
To Serve:
Serve with Thai Dressing Sauce and sliced spring onion.
