Ingredients:

  • 500g beef mince
  • 1 gluten-free chilli con carne recipe base
  • 2 onions, diced
  • 1 red capsicum, chopped into 1cm chunks
  • 500ml gluten-free beef stock
  • 1 400g can of crushed tomatoes
  • 400g black-eyed beans
  • oil

SERVE with rice

Method:

Place a large skillet over a low heat with a splash of oil. Add the diced onion and cook until translucent. 

Next, add your beef and brown it thoroughly. Stir in your gluten-free chilli con carne recipe base, sprinkling it evenly over the beef, and cook for another minute. 

Add the tinned tomatoes and beef stock, mixing well.
 
Then, add the black-eyed beans and red capsicum. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
