Ingredients:
- 600g chicken or vegetables, sliced into 1cm chunks
- 1 gluten-free butter chicken recipe base
- 2 tbsp ghee or butter or oil
- 1 onion, finely diced
- 400g passata
- 200g coconut milk or cream or evaporated milk
- 100ml gluten-free chicken stock
- SERVE with rice
Method:
Heat a skillet over a high heat and add one tbsp of oil. Sear the chicken on all sides, then remove and set aside.
Lower the heat to low. Add one tbsp of oil and cook the onions until they are soft and translucent.
Add the butter chicken recipe base, and cook for ten seconds. Pour in the chicken stock and cook for two minutes.
Add the passata and cook for another six minutes. Blend with a stick blender.
Return the chicken to the skillet and cook for five/six minutes.
Stir in the coconut milk and simmer for one minutes. Serve immediately with rice.
