Ingredients for Australian Salmon Thai Soup :
- 500g Australian salmon (cut into large chunks)
- 2 tbsp Thai Dressing Sauce
- 2 kaffir lime leafs
- 2 shallots (sliced thinly)
- 1/2 tsp minced lemongrass
- 1/2 tbsp minced ginger
- 1/2 tbsp minced garlic
- 1 red chilli (deseeded & sliced thinly)
- 500ml coconut milk
- 300ml gluten-free chicken stock
- 1/4 tsp cumin seeds
- 1/2 tsp curry powder
- 1/2 tsp coriander powder
- 1/4 cup lime juice
- 1 tbsp fresh coriander (roughly chopped)
- Salt & pepper to season
- Oil
How to cook this Australian Salmon Thai Soup recipe
Get a large skillet on a low heat with a tbsp of oil, once at heat add your shallots and cook until golden and soft.
Next, add the cumin seeds and cook for 1 minute.
Now, add the garlic, ginger, lemongrass and kaffir lime leafs and cook for 2 minutes.
Add, the dry spices and chicken stock and cook for another 2 minutes.
Remove from the heat and add the coconut milk and stir well and return to the heat and bring to a simmer.
Add the fresh lime juice, Thai Dressing Sauce, some of the red chilli and cook for another 2 minutes.
Season well and then add your salmon and pop a lid on with the heat on low and cook for 2 minutes or until the salmon is cooked.
Check seasoning and serve with fresh coriander, red chilli and sliced thinly kaffir lime leaf.
