Asian Short Beef Ribs with Passion Fruit Korean Hot Sauce and Garlic Rice

Slow cooked beef short ribs with a Korean passion fruit hot sauce glaze and garlic rice will impress all your mates! This recipe is easy to recreate and will become a winner in any house hold!

Ingredients

Short Rib Ingredients:

  • 4 short beef Rib Fingers
  • 2 cups Gluten-Free beef stock
  • 1 brown onion (cut into quarters)
  • 1 carrot (sliced in quarters)
  • 2 spring onions (sliced in quarters)
  • 6 tbsp sweet gluten-free soy sauce
  • 3 tbsp gluten-free soy sauce
  • 3 tbsp minced garlic
  • 3 tbsp minced Ginger
  • 1 cup brown sugar
  • 1-3 tbsp Passion Fruit Korean Hot Sauce (add to your heat level)
  • 2 tsp sesame oil
  • ¼ tsp Chinese 5 spice
  • 2 tsp sesame seeds
  • 6 tbsp rice vinegar
  • 1 tbsp vegetable oil

Short Rib Glaze Ingredients:

  • 6 tbsp sweet gluten-free soy sauce
  • 3 tbsp gluten-free soy sauce
  • 3 tbsp minced garlic
  • 3 tbsp minced Ginger
  • 2 tbsp Brown sugar
  • 1-3 tbsp Passion Fruit Korean Hot Sauce (add to your heat level)
  • 2 tsp sesame oil
  • ¼ tsp Chinese 5 spice
  • 2 tsp sesame seeds
  • 6 tbsp rice vinegar
  • 1 tsp vegetable oil

Garlic Rice Ingredients

  • 260g Jasmine rice (washed 3 times and drain well)
  • 1 TBSP Vegetable oil
  • 1 Tbsp sesame oil
  • 3 large garlic cloves (minced)
  • 500ml Chicken stock
  • Pinch of black pepper

Garnish:

  • Fresh coriander
  • Spring onion (chopped finely)
  • Fried sweet potato (peeled salt, pepper & 1 tsp Chinese 5 spice)

Instructions Short Beef Ribs:

Dry off your short ribs with a paper towel.

Heat a pan on a high heat with 1 tbsp oil and quickly brown off the short ribs.

Put in an oven tray with the carrot, onion and spring onion.

Pre-heat the oven to 160C.

Get a medium sized bowl and pop in the short beef rib ingredients sweet gluten-free soy sauce, gluten-free soy sauce, minced garlic, minced Ginger, cup brown sugar, Passion Fruit Korean Hot Sauce (add to your heat level), sesame oil, Chinese 5 spice, sesame seeds, rice vinegar and vegetable oil and mix well.

Next, get a medium sized pan and add the above ingredients plus the beef stock and bring to the boil.

Now pour the mixture over the short ribs.

Cover with foil and cook for around 2 ½ - 3hrs until falling off the bone.

Short Rib Sweet Passion Fruit Korean Hot Sauce Glaze:

Get a medium sized pan and add, all Korean sweet glaze wing sauce ingredients. Mix and bring to boil. Then simmer for about 3-4 minutes. Turn off heat and set aside.

Instructions Garlic Fried Rice:

Heat up the veg oil & sesame oil in a pan on medium heat, next, add the garlic and cook for around 2 minutes. Now add the rice and chicken stock pepper and cook on low heat with a lid on for 5-8 minutes until the rice is cooked.

Serving:

Use a peeler to peel layers off the sweet potato and then toss in gluten-free rice flour with salt, pepper & Chinese 5 spice and then fry, 5 seconds, remove from fryer and put onto paper towel.

Cover the short ribs with half of the glaze.

Get a serving dish and add the garlic rice, then layer the short rib over and add the glaze sauce over and garnish with sweet potato, spring onion and coriander.
