Scrambled Eggs with Feta & Spinach and our Aunty Malee's Thai Lemon Dressing Sauce
After a quick & light brekkie? then our scrambled eggs with feta & spinach and our Aunty Malee's Thai Lemon Dressing Sauce is super easy and quick!

- 4 Eggs
- ½ Cup Cream
- Handful spinach
- 100g Feta
- 1 x Tbsp Oil
- Lemon zest for garnish (sliced thinly)
- 2 x Tomatoes
- ¼ Cup Olive oil
- Aunty Malee's Thai Lemon Dressing Sauce
- Pinch of salt
- Pinch of pepper
In a small sealable container put all the oil dressing ingredients together and then shake well until totally mixed.
Slice 2 tomatoes thinly and pop onto a flat plate, sprinkle olive oil, salt & pepper over them and leave in the fridge until serving.
Gently whisk eggs with cream and a pinch of salt.
Heat a non-stick frying pan for a minute or so, then add the oil.
Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan.
Let it sit for another 10 seconds then stir and fold again.
Repeat until the eggs are softly set and slightly runny in places. Remove from the heat and leave for a moment to finish cooking.
Now add in the spinach and feta.
Give a final stir and serve without delay with the tomatoes. Next, drizzle the oil dressing over and pop on the lemon zest garnish and a drop of Aunty Malee's Thai Lemon Dressing Sauce over.
